sabatelliPuglia was one of the protagonists of “Vinòforum,” the food and wine festival that brings together the best international companies in Rome. Special guest chef from Puglia was Angelo Sabatelli.
Meringue made of burnt wheat with Leccino olives, risotto with podolico cheese, apricots and peas powder, roast lamb with aubergine and tangerine candy, fried milk with strawberries. With this menu, Michelin-starred chef Angelo Sabatelli, directly from Monopoli, delighted the Roman audience of the Vinòforum, the food and wine festival that for 11 years has brought together the best Italian and international wineries in the Italian capital.
