Fried anchovies

Serves 4
600 g anchovies
flour
1 l evo oil
salt

Clean the anchovies under water. Bring the oil to 180°C (360°F) in an iron skillet with high sides. Flour the anchovies and then carefully remove the excess flour using a sieve. Fry the anchovies, turning occasionally until evenly golden.
Drain and tip into a pan lined with kitchen towel to dry. Season with salt.
Serve hot.
