A very much sought after olive from the southern Italian town sharing the same name, they have a sweet taste with a hint of almond.
Firm to the bite, round and perfect, with a meaty flesh and a pit that bursts out easily as a cherry-pit.
Besides eating then as part of an aperitif or in a Martini, you can use these olives as an ingredient to many dishes, including home-made focaccia which is stuffed with Bitetto olives and cherry tomatoes.
