Organic wines, craft beers, capocollo with vincotto, bread from Monte Sant’Angelo, octopus from Santo Spirito. There is so much Puglia in Enoteca Uvarara menu. A journey through the flavours of territory, the most hidden and most valuable, the one of Monti Dauni area, ranging wisely from northern to southern Italy, arriving in France. All the flavours are enclosed in the beautiful setting of this wine bar in the historic center of Foggia.
The owner is Ettore Pacilli, 35, food and wine enthusiast, who bought and renewed this place in March of 2013 after meeting Daniel Rigillo, sommelier. Uvarara soon became a meeting place for many tourists and people from Foggia, where they can taste wine and high quality products. ‘Our products are always fresh’ Ettore says. Every day he brings freshly baked bread and mozzarella cheese.
In Uvarara wine cellar there are 55 Apulian wines out of a total of 380 wines. “My favourite wine from Puglia? The Morella, a biodynamic Primitivo di Manduria wine’, Ettore says.
Our tasting starts with bruschetta bread from Monte Sant’Angelo, cherry tomatoes and fresh arugula, preceded by a fresh beef carpaccio with goat cheese and thyme. Among the soft cheese, semi-mature and mature based on availability, there are some outstanding French cheeses: the goat’s milk and fig milk, cheese with olives, chèvre in ashes, with pepper, herbs, accompanied by rose petal jam, freeze-dried pineapple, strawberry jam.
In addition to Giannelli cured meats located in Troia, do not miss the Parma ham served with buffalo of Masseria Li Gatti, a company based in Torremaggiore, Foggia, and other products typical of Emilia Romagna such as tigelle.
The original touch is the fish. The wine bar does not have a kitchen, but it offers anchovies from the Cantabrian Sea, octopus from Santo Spirito, Bari with parsley potatoes, French oysters reared in Gargano and ‘fish salumi’ by Moreno Cedroni (for example, bresaola of tuna with green apples, nuts and raw spinach).
Don’t miss the desserts: white chocolate mousse with strawberries sauce and cookie crumbled, the tiramisu with walnut and walnut liquor and panna cotta with basil.
