Faeto ham, recognized by the Region of Puglia as a “Typical Regional Product”, is produced with meat of the local black pig and processed according to ancient methods according to the particular microclimatic conditions.
The raw material is made from pork leg weighing between 9 and 12 kg.
The ham is dry salted.
The phase of the grouting is performed with pork fat.
The aging of the minimum duration of 12 months occurs in places that are 700 meters above sea level, in the presence of humidity values that guarantee a slow process.
